Description: Very quick and simple method of cooking peri peri chicken
Ingredients:
Chicken pieces or whole cchicken flattie (spatchcock)
Peri peri sauce
Chicken spice
Preparation:
Microwave pieces for 5 minutes or flattie for 10 minutes
Drain and spice with chicken spicel
Place on braai grid over hot coals and grill, turning regularly, cook until tender but not dry (+- 10 minutes for pieces and +- 20 minutes for flattie)
Baste with peri peri sauce to taste and grill for about 1 minute. Serve
Notes:
If a stonger peri peri flavour is required, then baste again after removing for the grid.
