Description: Wonderfully adaptable, can be served in pita bread, with a salad or as a roast! Can be cooked in a kettle braai or directly into coals
Ingredients:
ALL INGREDIENT QUANTITIES TO YOUR TASTE1
1 deboned and marinaded leg of lamb (you can marinade in greek salad dressing, pref for 24 hours)
baby potatoes
button mushrooms
tomato puree
sliced onions
garlic
wine or lemon juice
aromat
black pepper
olive oil
Preparation:
FOR IN THE COALS
Using a large double piece of thick foil, place your flattened lamb on the foil, add all ingredientsand sprinke with olive oil. Wrap up and seal foil. Place directly into medium coals and allow to cook for 1 - 11/2 hours depending on size of meat. You can then drain the meat (saving all the juices mushrooms and potatoes) and place on the braai grid to brown for 10 minutes if neccessary
FOR KETTLE BRAAI
Using an indirect fire, place all ingredients into a suitable pan on the grid. Cover and cook for 1 - 11/2 hours, basting ocassioanlly.
